The Chupon de Malinalco tomatillo, an heirloom variety from Malinalco, Mexico, presents a citrusy yellow hue, a pointed shape, and a distinctive sweet-tart flavor that enhances both sweet and savory dishes. This culinary gem, treasured for its versatility, produces fruits up to 4 inches long, blending the flavors of a sweet paste tomato and a husk cherry. Ideal for salsas, these fruits can also be cooked like tomatoes or enjoyed fresh, akin to an apple. Slightly heart-shaped and lemony-yellow, these extra-large tomatillos offer a tropical taste, setting them apart from other varieties. Discovered by botanical explorer Joe Simcox in the mystical town of Malinalco, this fabled variety is celebrated for its size, sweet fruity flavor, and productive plants sheathed in papery husks. Its unique flavor profile, reminiscent of green apple with tangy notes, has been creatively used by Portland Chef Sam Reed in Romesco sauce, making it a valuable addition to any salsa or sauce recipe.
