Also known as White Patty Pan. A very ancient Native American heirloom squash, grown by the northern Indians for hundreds of years. This type was depicted by Europeans back to 1591, and is one of the best tasting and yielding varieties still around today! Deeply scalloped, pie-shaped fruits measure 6-7” across by 3” deep and turn creamy-white. Flesh is milky-white, firm and tender with a mild, sweet flavor. Pick early at 3-4” in diameter for tender, more flavorful fruits, or let them grow big to grate and use as you would any zucchini. Great steamed, grilled with butter, fried, baked, and used in breads, cakes, or casseroles.
