Garlic scapes are the stalks that grow from the bulbs of hardneck garlic plants. They can be diced and used in omelettes, frittatas, soups and salads. They can be eaten cooked or raw—though, be warned, they are a little tough when raw. They can also be pickled, then used in salads in place of gherkins or other pickles. The entire garlic scape is edible and you can use the whole scape in pestos and other purees. They are excellent for freezing for later use. Scapes taste mild and sweet, like chives or scallions, but with a hit of unmistakable garlicky flavor that's softer than its bulbous counterpart.
