
Details
Excellent heirloom salsify offered in the U.S. since at least 1894. Salsify is also known as the vegetable oyster, because it is so very similar in taste and fragrance, and many prefer to use its peeled creamy flesh to make a mock oyster stew. Certainly these days with the ocean environment under such assault, it is a safer choice. It is closely related to the dandelion, which is more evident when it produces a seed head. Roots grow 8" x 1.5".
