The Emerald Okra, an old heirloom variety from the 1950s developed by Campbell's Soup Company, is known for its beautifully bright and early maturing pods that retain their vibrant green color even after cooking. Recommended for harvest between 3-4 inches for optimal tenderness and flavor, this variety excels in soups, stews, and when fried or boiled. The long, deep-green, ribbed pods of the Emerald Okra are tender, and the plant is a prolific producer, yielding abundant crops with regular picking. It grows to a height of five to seven feet and is resistant to heat and drought, ensuring plentiful yields of juicy, crisp pods that remain tender even at full height.
