An exotic vegetable grown and cherished by the Aztecs. Cucumber texture and green bean flavors. They are often pickled, eaten raw with salads, or as a vegetable. Larger-size caiguas can be consumed stuffed and braised, too. These were a big hit at the farmers' market once they were sampled! The plant is also an ancient Peruvian and Bolivian medicinal plant whose use dates back to the Inca population and was used for healing ceremonies.
