Also known as Mexican Mint Marigold, Sweet Mace and Yerbis Anis. Mexican Tarragon has a pleasant licorice scent and flavor. It is an excellent choice for spicy food as the flavor is stronger and more robust than French Tarragon. It is a great choice for containers, the herb or vegetable garden, or annual beds. Once established, it tolerates drought nicely, and heat and humidity are never problems.
To harvest the foliage for seasoning and spice, cut the stems before the blooms appear. You can do this all at once or gradually, as the plants will regrow all season long from trimmings.
