Details
The White Borage (Borago officinalis alba) is a rare and striking variation of its blue-flowered counterpart, featuring pristine white, star-shaped blooms that are both edible and pollinator-friendly. This annual herb, growing 2 to 3 feet tall, thrives in USDA zones 3-9 and is an excellent companion plant, attracting beneficial insects and pollinators while helping to repel hornworms on tomatoes. Its silvery-green leaves, covered in soft bristled hairs, add texture and beauty to the garden, making it just as ornamental as it is useful.
Both the young leaves and blossoms of White Borage are edible, imparting a mild cucumber flavor perfect for salads, vinegar, soups, and cold teas. The leaves can also be cooked like spinach, while the gorgeous white flowers make an exquisite garnish for dishes and beverages. Whether grown in containers, herb gardens, or interplanted in vegetable beds, White Borage is a versatile, easy-to-grow herb that provides both culinary delight and ecological benefits.
