This 8-foot ornamental plant produces giant, golden-orange flower heads. It can be used as a decorative dried flower and as a novel kitchen garden vegetable. Amaranth is an excellent food source: the greens are delicious and very high in important vitamins and minerals, and the abundant tiny seeds are a popular and nutritious grain.
